Bumu by Joaquin Baca

Izakaya-style eatery, by the Momofuku alum, featuring many of the signature dishes from his shuttered Brooklyn restaurant Teo.

Joaquin Baca, also known for the southern-comfort-inspired Brooklyn Star in Williamsburg, has returned to downtown Manhattan having taken over the space, which previously housed top-rated sushi spot Neta. The space merges inspiration from izakaya restaurants in Japan with the modern vibe of the neighborhood, with textured, colorful wallpaper and wood accents.  

This Japanese-inspired izakaya - complete with stark setting - combines Asian and American ingredients and techniques with many of Teo's signatures dishes appearing on the menu such as: cast-iron-skillet okonomiyaki with Benton’s ham and Duke’s mayonnaise; pork belly and pineapple and smoked beef tongue with cucumber and spicy mustard.

 

Signature Dishes

Fried oysters with smoked yam; pork belly yaki with pineapple and hoisin; baby octopus yaki with shiitake and horseradish; chutoro with habanada pepper and passion fruit; grilled short ribs; and agedashi eggplant.
