The Pem by Sally Abé

A modern take on the classic London restaurant and dining room from chef Sally Abé - former Head Chef of London's only Michelin-starred pub - The Harwood Arms.

The restaurant - at the Conrad London hotel in St. James’s - takes its name from suffragette Emily Wilding Davison, whose family used the pet name ‘Pem’ for her.  The menu at The Pem displays an elevated style of the food that Sally has become renowned for - "taking classic combinations and really making them my own", with dishes such as as poached lobster with tomatoes, shellfish cream, and olive; a whole roasted John Dory with brassicas, lemon, and sauce Choron and a riff on a Black Forest gâteau with English cherry ripple ice-cream. The Pem has been thoughtfully constructed with a rosy-hued Art Deco inspired design, with a spacious main dining room.

 

Signature Dishes

Charred day boat mackerel with raw and pickled summer vegetables, salad cream & citrus; rabbit ballotine with peas, broad beans & tarragon mustard; roast John Dory brassicas with bobby beans & Exmoor caviar and Norfolk poussin with charred sweetcorn, spring onion & trompette.
