The latest venture from Arnaud Frisch - who's also behind cult film director David Lynch’s nightclub, Silencio in Paris. Located in an absolutley charming hidden courtyard of the Carnavalet Museum - situated in the historical Marais district. Design guru François Champsaur has fashioned a stylish eatery - complete with furniture made from natural materials and all with an environmentally friendly approach - in such a unique architectural setting.
Replacing last year's resident chef Chloé Charles is another candidate of “Top chef", Thibaut Spiwack (Mensae, The Sellae). Spiwack is serving up an ethical 'haute-bistronomy' menu, with a focus championing local produce and minimising waste. Highlights include: beef gravlax with cognac, turmeric and cider mussels and mashed broccoli with horseradish and ricotta and eggplant gnocchi with eggplant and cumin crackers and arugula pesto.
