Le 39V by Frédéric Vardon

Perched on the 6th floor of a Haussmann building on Avenue George V, with views across the rooftops and a menu focused on sustainable ingredients and local products.

Completely revised and redecorated by designer Raphaël Navot (Hôtel National des Arts et Métiers and Silenco), chef Frédéric Vardon's 39V has reopened with futuristic, minimalist interiors featuring curvaceous decor, natural materials and earthy tones. The restaurant also opens onto a stunning hanging garden and terrace complete with a 'floating' 100 year old olive tree and views to the Eiffel Tower. 

The chef, previously with Alain Ducasse with whom he opened Spoon, Vardon delivers an eco-friendly menu focused around bold flavours, seasonality and sustainability, with dishes including smoked Crissenon trout with cherry wood, kimchi and horseradish and locally sourced langoustine with remoulade.
