Executive Chef Sanjay Dwivedi combines traditional elements of Peruvian cuisine with Modern European cooking techniques and Asian influences, to create Coya’s naturally light and healthy dishes. 

Within the restaurant, an intricately designed and hand carved six seater ‘Rum Round Table’ can be found, in addition to two open kitchens; a ceviche bar and a charcoal grill. Sitting adjacent to the main dining room, the Pisco Bar specialises in bespoke pisco infusions unique to Coya, a large selection of tequilas, and an extensive rum list. For a more exclusive lunch or dinner option, two private dining rooms are available, with the larger seating up to 18 guests and offering its own private terrace.

In line with the Coya ethos of true Peruvian culture, all furniture is bespoke and hand-selected with a focus on artesian craftsmanship, with Spanish and Inca influences throughout. The restaurant also features photography from Martin Chambi, who is recognised for the profound historic and ethnic documentary value of his photographs.
