The three Michelin-starred protégé spent the last 24 years working almost exclusively alongside the legendary French chef Joël Robuchon - leading several of his restaurant operations around the world, including in Paris and Tokyo.
Le Jardinier (housed in the startchitect Norman Foster's luxury skyscraper at 100 E. 53rd. St.) is rooted in classic French technique, with a vegetable focused menu where plants play a prominent role. The wine list includes traditional Old World wines and newer, biodynamic and organic options with cocktails from Dushan Zaric of Employees Only.
The light-filled, ground floor restaurant - designed by Joseph Dirand, features abundant greenery and planting. Open Monday through Saturday from 5pm to 11pm.
Vegging out
Persian cucumber, Montauk fluke crudo and crispy black rice; and baby carrot, snap peas and spring onions with Maine scallops and poached white asparagus with puffed buckwheat seeds, a blood orange reduction, and pickled white strawberries.
