A native of Chengdu Tong, chef Simone Tong has worked in Michelin-starred restaurants such as wd-50 and 15 East before opening her noodle hot spot - Little Tong Noodle Shop (in Midtown & East Village), which is focused on the flavors of Yunnan province, one of China’s most southern provinces. With Silver Apricot, Tong is going more upscale dishing up high-end Chinese fare in a small space that includes a dining room, experimental chef’s counter and an outdoor garden.
