Using the freshest ingredients and a modern take on classic culinary techniques to showcase the flavors and dishes of Peru.

The first brick-and-mortar location (on the Upper East Side) for the market vendor. José Luis Chavez, a native of Peru, works out of an open kitchen in this stylish and sprawling restaurant. Expect a more formal presentation to many of the dishes served at his stalls in the Gansevoort and Canal Street Markets and a deeper drive into Peruvian cuisine, with dishes such as rilled anticucho skewers of octopus or beef heart, larger plates of seafood or chicken over rice, and causas.

There’s a bar up front where pisco, the Peruvian grape spirit, figures in most of the cocktails, including a piscajita, a riff on the popular Mexican salt-rimmed drink and a classic Pisco Sour and a Maracuya Sour with pisco, lime juice, passion fruit, and egg white.
