A smart, unmarked 20-table restaurant from Le Bilboquet owners Philippe Delgrange and billionaire mogual Ron Perelman, at 27 East 62nd St. between Madison Park Avenues. Named for the school that occupied the space decades ago.
To gain entry the restaurant has a "reservation protocol" and asks its staff to Google guests who try to make a reservation to make sure they're fabulous and wealthy enough to eat there. Once in, Fleming serves many of the same dishes as the original Le Bilboquet, plus some new Provencal-style offerings.

Artichoke beignets; heirloom tomato and goat cheese salad; poached halibut with fennel; seared cod with garlic aioli; roast chicken with chicken leg confit and wagyu beef tenderloin.
