Ruinart have collaborated this year with Brazilian artist Vik Muniz to create a series of images entitled ‘Shared Roots’. Paying homage to winegrowers and vineyards, the works use organic elements such as blackened wood and charcoal to represent the relationship between humans and nature.
The artworks are on display at this year’s Frieze London, and The Palomar have worked with Ruinart to echo the ‘Shared Roots’ concept with a menu (available at lunch & dinner) focusing on and celebrating the humble root vegetable. Priced at £55 and includes a a glass of Ruinart N.V. Brut Champagne.
Modern Jerusalem flavours
The usual Palomar starters of kubaneh with dips inspired by vegetables such as ‘Beetlabneh’, a labneh served with beetroot. Sharing main courses with vegetables taking the centre stage such as 'wild seabass tartare with pickled carrot' alongside the classic Palomar josperised octopus served with kohlrabi.
