Previously the Executive Chef of Union Square Hospitality Group’s Untitled at The Whitney Museum, Cupps became known for her vegetable-forward cooking. Expect more to the same at 232 Bleecker - a standalone full service, sit down restaurant from fast-casual chain Dig Inn - with seasonal vegetable dishes, homemade pastas and simple, hearty meals. Much of the produce is sourced from local farmers and the DIG Acres Farm in Chester. The space - on a historic West Village corner - revolves around an open kitchen, the centerpiece of which is a giant, wood-burning grill with a hearth.
Vegging out, seasonal suppers
Grilled chicken with sweet potatoes, black garlic aioli; roasted blackfish in a green curry with turnips and fingerling potatoes, tagliatelle with crab, Jimmy Nardello chile peppers, and einkorn.
