Master sommelier Dustin Wilson (ex-Eleven Madison Park) and chef Austin Johnson (ex-Frenchie in Paris and London) are the partners behind One White Street - housed in an historic Tribeca townhouse where John Lennon and Yoko Ono once had their “Nutopian Embassy", and features a casual eatery on the first level, while the upper floors offers elaborate tasting menus served from two open-air kitchens.
The menus changes regularly with dishes such as striped bass ceviche with radish; mussels with green curry and grilled scallop skewers with summer squash, pumpkin seeds, arugula pesto. Upstairs, diners order from multi-course tasting menus of ingredient-driven, globally inspired food.
Roasted mussels with lemongrass, coconut, avocado, and pickled carrot; shaved fennel with yuzu, blue cheese, white anchovy, and candied pistachio; tartare of beef with sourdough, cured egg yolk, salsify, and sesame; and a dry aged strip steak with bone marrow, Yukon gold potatoes, and Camembert.
Johnson, inspired by French chefs who have their own farms and gardens to draw upon for produce, has teamed up with Eliot Coleman of Four Seasons Farm in Maine (who designed Dan Barber’s Stone Barns) to create Rigor Hill Farm in the Hudson Valley’s Columbia County. Much of the produce on the farm is grown exclusively for One White Street.
