Sabbaba Montesol

Dishing up modern Israeli cuisine, by Tomer Amedi, the Executive Chef at The Palomar in London.

Experimental Group is set to open its new restaurant and bar this summer as the first stage in the transformation of Gran Hotel Montesol Ibiza, a historic property that opened in 1933. Sabbaba Montesol is slated to open at the end of July following an extensive redesign by Dorothée Meilichzon, the award-winning French hospitality designer. 

Sister restaurant to Balagan Paris, the restaurant houses 60 seats in the main restaurant, 90 seats on the terrace on Vara Del Rey and 120 seats on the rooftop, with views overlooking Ibiza old town and the port. Head Chef Tomer Amedi, who is known for founding renowned Israeli eatery, The Palomar, in London, serves inventive modern Israeli cuisine from the open kitchen and robata grill. So expect a Middle Eastern twist to Spanish tapas.
