The Pasta Ramen Experience

A 'secret' Wafu-Italian cross-cultural dining experience, launching in Miami this January.

Pitched as 'more than a simple pop-up or a one-off experiment', Pasta Ramen is a roaming Wafu-Italian omakase concept - that first originated in the 1950s at a Tokyo restaurant, Kabenoana, meaning “hole in the wall". Expect a lavish and intricate multi-course exploration of the Wafu pasta concept with dishes such as gyoza dumpling filled with cacio e pepe and porcini truffle brodo with fresh shaved black truffle - paired with a selection of sake.

The location is shared via text the day before the dinner; after its January 2022 Miami debut, expect to find Pasta Ramen dinners taking place in New Jersey, New York and Philadelphia. The dinner is priced at $295 per person.

Cacio e Pepe Fritti – cacio e pepe filled, hand-pinched gyoza dumpling: topped with fresh cracked black pepper and parmigiano reggiano; Truffle Porcini Ramen – porcini truffle brodo with fresh shaved black truffle and a dry aged Japanese A5 wagyu – cooked with 15-year aged aceto balsamico from Modena, Italy.
