Manoella Buffara at Amazonico London

Internationally-acclaimed Brazilian chef, Manoella ‘Manu’ Buffara is in London with a month-long residency at Amazonico London.

Her seminal restaurant Manu was notably the first in Brazil to be headed up by a woman serving only a tasting menu and holds a place in Latin America’s prestigious 50 Best Restaurants. Manu - and Amazónico London's Executive Chef, Vitelio Reyes - have created unique tasting menus, along with á la carte dishes, that showcase rare ingredients from Brazil alongside her ethos of waste reduction and her specialist techniques, cooking processes and Brazilian flavours.

The superb nine-course menu, priced at £135 per person, includes dishes such as mini lobster tacos filled with cashew sour cream and a green apple vinaigrette and marinated Yellowtail with a sour nut milk, topped with a cashew nut crumble with lemon zest and coriander. Throughout the month-long collaboration there's a reduced version of the tasting menu available at lunchtime priced at £75 per person.
