According to an article in the New York Times the French-born chef will launch a new restaurant at the Waldorf Astoria Beverly Hills when the hotel opens in about a year's time.
Like the five-star hotel, which will feature 170-bedrooms, the yet-to-be-named restaurant is being designed with a contemporary look and feel by Pierre-Yves Rochon, who also developed the interiors for the Savoy in London and the Four Seasons George V in Paris. It will have about 150 seats both indoors and outside.
Vongerichten insisted his intention is not to “reinvent” California cuisine. “But it will be very farm-to-table,” he told the New York Times. “I want to incorporate trends that are happening there. It will be the first major restaurant to open in that area in quite a while.”
