Baldoria

The former Mozza sommelier and general manager of Cube Marketplace brings a hybrid bar-restaurant to Little Tokyo offering spirits-forward cocktails and elevated bar bites.

David Karl King has teamed up with chef Duke Gervais for Baldoria, a multi-faceted communal dining concept with a globally-influenced menu.

Chef Gervais was previously the executive chef at the Cube Café & Marketplace as well as Love Catering. He has put together a food offer of Italian-inspired small bites. The menu features cheese and charcuterie as well as meat and vegetarian dishes and a brunch menu, including both light and hearty options. There is also a dedicated pizza section featuring unusual concoctions like the charred octopus pizza topped with baby octopus, caramelized cipollini and a charred radicchio cream sauce.

And then there’s the cocktail menu, put together by King. All of Baldoria’s cocktails are made in-house and either offered on-tap or by the bottle. There’ll also be a monthly rotating cocktail from guest bar tenders.

Citrus Stuffed Endive with blood orange, satsumas, oro blanco, goat cheese and almonds; Pan Fried Short Rib Ravioli: spicy arrabbiata di Lazio and parmesan; Fritto Misto Di Mare: calamari, farmers market vegetables and lemon aioli; Beeler’s Pulled Pork Sliders: smoky bourbon bbq sauce, house pickled slaw.

Signature Drinks

The Gin Sling Sling: gin, maraschino infused liquor, lime, house made ginger beer; and the Barrel Aged Tour Eiffel: xo cognac, suze Cointreau, absinthe aged on American white oak.
