Lyle's Guest Series with Pujol's Jesús Durón

Jesús Durón, Executive Chef of Pujol in Mexico City, is taking over the Lyle’s kitchen for two nights only.

 
Jesús began his career in his native Mexico, before moving to Spain to apprentice at three Michelin-starred El Celler de Can Roca in Girona. He then worked at La Marine on the island of Nourmoutier, before returning to Mexico and beginning his relationship with Enrique Olvera, founder of Pujol. His cooking shows the influences of his time in Europe whilst also paying homage to the philosophy of simplicity and elegance cultivated at Pujol.
 
At Lyle's, he will be making the most of the UK's game season, combining his favourite Mexican herbs and spices with local produce. Dishes include razor clam ceviche with herbs bouquet; sea snail salad with radicchio, smoked eel, ratte potatoes and anchovy emulsion; mallard breast with chanterelles pillote and egg plant; and will finish with an apple gaznate. Tickets are priced at £95pp, with an accompanying wine pairing at £75pp.
