Carlo Carello, manager, partner, developer of elite London clubs, (his newest being Albert's) and the man behind a good night out, shares his perfect day out.

How do you start your day?
I am generally an early riser and I like to be out of the house as soon as possible, after a cuddle with my fiancé, Alex. I tend to walk to Blakes and order my iced latte and take it on site where my work day starts.

Leisurely lunch go to?
I love Squirrel, Charlie Gilkes' new salad bar in South Kensington and the Prawn Star salad is to die for.

Favourite way to pass the time in London?
I don't get too much time to myself, but when I do, I love walking around Hyde Park in the sunshine. In the Winter you will most likely find me in Harrods Food Hall.

Favourite London landmarks, and why?
My favourite London landmark would have the be the Royal Albert Hall. Everywhere in Albertropolis has so much history and the architecture is amazing. The V & A and Albert Bridge I could also spend hours looking at.

Tipple of choice and favourite cocktail hangout?
My go-to drink is sparkling water and elderflower and I love the Connaught for cocktails.

Favourite dining destinations, and why?
The Cliff in Barbados I hold very close to my heart, as it is where I celebrated my engagement.

Final stop for a nightcap, and why?
As I am out and about the majority of the time, there is nothing that I love more than a night in and a chamomile tea at home. These are the times I really treasure.

Best hangover remedy?
Not drinking at all...

Where next on your travels?
I am going to Italy a lot at the moment for wedding planning. My family is from Torrino, so I go between London and there as much as I can and our Summer house in Lipari (Aeolian Islands off Sicily).

Carlo Carello has been business development director and grown Ignite Group internationally, including Eclipse bars and Bumpkin restaurants and London's favourites Boujis. Previous to that he was business development manager for Ministry of Sound, both at home and abroad, and has set up the member's club at Morton's.
