In the world of dumplings, the small, bite-sides parcels of hot soupy deliciousness - aka the Xiaolongbao - are considered by many as the king. These super hot mouthfuls create a constant battle of wanting to inhale them and knowing that to do so too soon would incur an almost instant state of scalded mouth, the repercussions of which will last much longer than the brief taste bud high. Once you let them become a temperature your mouth can actually handle, they really are pretty amazing.
Getting in line with the great American idea that bigger is always better, East Village new kid on the block has upped their soup dumpling game by creating a massive version that fits an entire bowl of soup in one nearly translucent steamed pastry wrap, perfect for very carefully having a soup on the go. The size of a steamed basket which normally holds 4-6 normal sized versions, these double-handers are carefully made every day by the owner's mother who only is able to make around 30 per day. While there is a plan to hire more dumpling creators, the current output means they generally sell out by the early evening, causing guests to line-up pre-opening to experience the latest NYC food crazy.
