Most people think of Sushi as a delicate dance of rice and raw fish but it's time to expand your culinary horizons. Beyond Sushi takes the basic idea of the Japanese snack and takes it to another level: Vegan with a serious dose of health.

Replacing animal proteins for vegetables and fruit, they've upped the nutritional content by playing with the rice as well, adding in colorful and complex grains such as red rice, Chinese forbidden black rice, purple barley, brown rice and rye berries. These different grains add an extra level of visual stimulation, but also give your body more bang for its buck, enhancing the flavor combinations in different ways. If this all sounds a bit strange, take a look at their menu where dishes like the Sweet Tree with avocado, sweet potato and alfalfa sprouts with toasted cayenne sauce, sound pretty damn delicious.

Founded by husband and wife team, Guy & Tali Vaknin, the first location opened near Union Square in 2012, but they have since been slowly expanding across Manhattan, with plans to open several more over the next year.
