Ad Lib will take place within Silverado’s existing Royal Oak restaurant, serving a la carte dinner five nights a week (Thursday through Monday) offering a classic American menu of traditional recipes reimagined by Keller and overseen by Michael Wallace (sous chef at the French Laundry). Expect dishes such as classic Caesar salad and steak tartare, both prepared table-side, smoked kielbasa, Black Angus chop steak, root vegetable pot pie, braised beef short rib “Wellington,” Alaskan king crab legs, and a seven-layer coconut cake.
The renovations (as part of the restaurant's 20th anniversary celebrations) will make room for an expanded kitchen and garden, new office space and a rearranged parking lot - and expected to re-open in March.
There will be a hearty selection of daily specials influenced by The French Laundry Culinary Garden.
An Ad Lib wine list will be offered, with cocktails available from the Silverado bar.
A private dining room will accommodate up to 14 guests at a time and complimentary valet parking will also be available.
