Chef Michael Schulson’s Monkitail at The Diplomat Beach Resort offers a smoky twist on a classic bourbon with The Monkitail, made with a delicious blend of Bourbon, Rye, Vermouth and Barrel Stave Smoke. Recipe:
1 oz Maker’s Mark
1 oz Bulleit Bourbon
.5 oz Sweet Vermouth
.5 oz Dry Vermouth
2 dashes Angostura Bitters
2 dashes Orange Bitters
Method: Combine all ingredients in a mixing glass. Stir, and strain into a carafe. Smoke a snifter with crushed cinnamon and clove, and pour contents from the carafe into the snifter.
Cocktail: Charcoal Bourbon Sour
The 100% plant-based restaurant’s elevated twist on a whiskey sour is infused with activated charcoal to create a distinct black cocktail, mixed with High West bourbon and lemon, and topped with aquafaba for a frothy finish.

1.5 oz High West Bourbon
1 oz Aquafaba
1 oz Fresh Lemon
1 oz Activated Charcoal Syrup (20 oz water, 20 oz sugar, 8 oz charcoal powder)
Method: Begin with the activated charcoal syrup - bring 20 oz of water to a boil, then add 20 oz of sugar. Once sugar is dissolved, add 8 oz of charcoal powder mix, then let cool. Combine bourbon, fresh lemon, activated charcoal syrup and aquafaba in a cocktail shaker, mix and strain into a cocktail glass.

Add Straight Bourbon
