Miami's Best Live-Fire Restaurants

Discover the hottest places in Miami, which are all fired up and cooking on open flames

Quinto La Huella

The first US outpost of the famed Uruguayan beachfront eatery Parador La Huella. Bringing the Uruguayan beach vibe stateside, this contemporary, rustic LatAm farm-to-table restaurant (on the fifth floor of the sleek East, Miami hotel) features an open-flame wood-fired parrilla at the center of its kitchen and a sushi counter highlighting Florida’s coastline. Dine on locally sourced, organic fare from kale and quinoa salads to chef Nano Crespo’s steaks, lamb and sweetbreads, seared a la parrilla. Dine out on the tropical-chic terrace for when the weather is clement - with views of the Miami skyline.

Los Fuegos by Francis Mallmann

Award-winning Argentine chef Francis Mallmann may be a familiar name to American diners, Los Fuegos marks his first foray outside of his native South America -  at the glamorous Faena Miami Beach Hotel. Set right in the hotel’s courtyard, the kitchen comes with a custom-made wood oven, a grand-scale grill known as the “piano,” planchas (metal griddles) and even an area dedicated solely to cooking in ashes. The grillmaster creates a contemporary asado experience with an open-fire kitchen, local ingredients and a gaucho’s touch to transform traditional rustic recipes into sophisticated, savory dishes. Expect to feast on grilled and roasted meats cooked to succulent perfection. There are plenty of local fresh seafood options and vegetables as well — fired up, of course. The restaurant hosts a weekly asado, an outdoor party featuring whole animals, including both meat and seafood.

Ember by Brad Kilgore, opening soon

A wood-fired American bistro featuring dishes cooked over an open-flame by James Beard award finalist Brad Kilgore. This hugely-anticapted wood-fire-centric, chef-driven American restaurant is located directly below Kaido - his Asian inspired cocktail lounge - and revolves around wood-fired food - enabling Kilgore to show off his love of all things barbecue and wood-cooked food - he's a Kansas City native afterall. Kilgore's CV has some serious fine dining pedigree, including stints at Chicago's L2O, Alinea, Boka and Jean-Georges Vongerichten's J&G Grill and is behind highly acclaimed restaurants in Miami - Alter and Brava.

Kyu

Michael Lewis and Steven Haigh from Zuma are behind this Asian eatery in Wynwood focusing on wood-fired grill cuisine. Wynwood is home to some pretty hip restaurants (think: Kush, Alter, and Wynwood Diner), including Kyu. The guys formerly from Downtown's popular Zuma restaurant teamed up to bring us this Asian eatery, giving us yet one more reason to love this funky neighborhood. Chef Lewis’s menu is influenced by years of global travel and inspired by Japanese and Korean yakiniku. The plates are designed to be straightforward and shareable with elements of American Southern barbecue peppered throughout the menu including the traditional “slow and low” technique. A carefully curated cocktail list features variations of classic cocktails with clever Asian twists.

Amara at Paraiso

Upscale Latin fare is served in a chic waterside dining room with a deck overlooking the stunning Biscayne Bay. In its idyllic bayside setting, James Beard award-winning chef and owner, Michael Schwartz, brings together bold Latin American flavours, coastal ingredients, and South Florida's diversity of food culture to create the quintessential Miami waterfront restaurant from environment to cuisine and vibe. Expect wholesome dishes with great ingredients and simple cooking techniques centered around the flame. The 4500-square-foot, indoor-outdoor space boasts industrial and resort-style vibes, with a few eccentric nods to Miami's exotic lifestyle.

Arson Miami

Chef Deme Lomas from nearby NIU crafts the charcoal-fired fare at this quirky Downtown Euro-Asian spot - in the heart of downtown Miami. The grill-and-smoke restaurant is outfitted with a Josper oven-grill hybrid and turns out boldly flavorful fare with a focus on grilled meats and seafood. Mainstays on the one-page menu - include charbroiled oyster with ponzu and rice vinegar mayo; Argentine shrimp with smoked paprika, tequila, and quebracho charcoal; and Duck 2 Ways, which comes charbroiled and smoked with apple textures and honey-mustard bread.
