Fulton by Jean-Georges Vongerichten

Vongerichten's first seafood restaurant with a menu focused on the best ingredients from the bounty of the ocean.

For four decades - studded with multiple Michelin stars - the chef now helms 36 (and counting) restaurants, including ABC Kitchen, abcV and Public Kitchen in New York, Market in Paris, and Mercato in Shanghai and Guangzhou. This happens to be his first restaurant in Lower Manhattan, on the site of the former Fulton Fish Market. 

The bilevel restaurant’s waterfront setting and modern industrial interiors (by Yabu Pushelber) offers a singular New York dining experience, with expansive patio seating and some of the best unobstructed views of the Brooklyn Bridge. With a hat tip to that history of the Seaport, you can expect a suitable piscatory tribute to the old Fulton Fish Market with a sea-to-table menu of seafood both raw and cooked, including dishes like Florida-red-snapper crudo with rhubarb and avocado, buckwheat-crusted redfish, and a fritto-misto salad with pickled cherry peppers.

Signature Dishes

Crispy seafood rice with paprika aïoli; yellowfin-tuna tartare with yuzu-mustard sauce; seared Carolina tilefish with leek-turmeric emulsion; wild-striped-bass crudo with habanero vinaigrette; and warm octopus with fresh mozzarella.
