Daisuke Hayashi at Brown's Hotel

Brown’s Hotel is hosting a Japanese residency in its oak-panelled Drawing Room with chef Daisuke Hayashi.

The residency is in collaboration with chef Daisuke Hayashi - formerly of Tokimeitē and Sake No Hana - who will showcase Kaiseki or kaiseki-ryōri - a traditional multi-course Japanese style of dining – ahead of the opening of his new restaurant, Roketsu, scheduled to launch in spring 2020 in Mayfair.

Hayashi is one of the only masters of the Kaiseki tradition globally, and the first to bring this spectacular form of Japanese cuisine to London. Having trained at the renowned Kikunoi Ryotei restaurant in Kyoto from the age of eighteen, Chef Hayashi is now at the forefront of the next generation of Japanese chefs applying a modern, progressive approach to this revered gastronomic culture.
