The concept is similar to that established by Handling at his now permanently closed Ugly Butterfly restaurant in Chelsea. The ‘Toad on the Road’ pop-up serves up zero waste dishes on the street on the terrace outside Frog by Adam Handling on Southampton Street in Covent Garden. Using offcuts of prime produce from the Frog by Adam Handling Tasting Menu, the menu features waste ingredients which have been transformed into delicious and beautiful dishes.
Waste not, want not
Lobster rolls using offcuts from Adam’s Lobster wagyu dish, and Nanny Sophie’s fried chicken – using the thighs not needed for the restaurant’s chicken main course; and fish finger sandwiches made from turbot trim and failed pomme souffles served with caviar and all the trimmings.
Drinks from Eve Bar’s stunning new cocktail list are served on the terrace, including Coffee Negroni, which uses coffee grounds seeped in gin, left over from the Nespresso coffee pods served in the restaurant.
