The show-stopping installation - has transformed lost and found umbrellas from TFL during lockdown into a sustainable, colourful winter canopy. Discarded Spirits Co has sourced 200 forgotten umbrellas to create Bala Baya’s winter garden where you can sip on a collection of Discarded Spirits cocktails and get cosy on Bala Baya’s heated terrace.
The Discarded cocktail menu includes sustainable twists on familiar favourites and served alongside Chef Eran Tibi's festive sharing menu of Israeli-inspired dishes - priced at £55 per person.
Under the weather
Spiced apricot and sumac turkey leg with Eran’s spin on traditional stuffing, an indulgent mix of Porcini frikkeh, cranberries, soft herbs and spicy pitta crumb crust.
Banana Old Fashioned - a blend of Discarded Banana Peel Rum with sugar syrup and dashes of chocolate bitters and the Unusual Negroni - a mix of Discarded Vermouth (made from left-over cascara berries discarded during coffee production) with Hendrick’s Gin and Campari.
Bala Baya is also offering £1 off Discarded Spirits cocktails for every umbrella guests bring to donate, and is committed to extending the canopy all the way to the end of the street.
