Peeter Pihel is the Head Chef and Co-Founder of arts and food destination Fotografiska Tallinn. Hailing from the Estonian island of Saaremaa, Peeter has worked in the kitchens of Pädaste Manor in Estonia, Fulgurances in Paris and Magnus Nilsson's two Michelin-starred Faviken in Sweden. Now a leader in sustainable cooking back in Estonia, he opened Fotografiska in 2019 with the vision of establishing a strong network between restaurants, local farmers and livestock breeders.
Expect an evening of Nordic fine dining with a focus on beautiful seasonal ingredients, minimising waste and New Nordic techniques. The evening begins with ‘snacks from the fire’ and a glass of Sav sparkling wine at Roof Garden from 6:30, before the dinner continues in Eldr Dining Rooms at 7pm. The dinner is priced at £75 per person for the six courses, with the option of adding a drinks pairing for £49 per person.
Duck heart with tomato tea; carrot ceviche with sea-buckthorn curd, goat cheese & vegetable granola; confit duck egg yolk with marinated and crispy mushrooms, lingonberries & creamy mushroom broth and a honey pie - made with honey from Fotografiska’s rooftop bees.
