The Korean-American chef (and a former professional snowboarder) has built up a successful empire of restaurants from Las Vegas and Jakarta to Toronto and Bangkok with his self-described menu of modern Japanese food with Korean accents - derived from seasonal produce and artisanal ingredients. Mandarin Oriental Mayfair, located on Hanover Square, is home to award-winning chef Akira Back’s first namesake all-day dining restaurant in the UK, along with his A Bar Lounge concept, Dosa - a chef's table experience and a rooftop bar overlooking Mayfair.
The main dining room is an impressive triple height room with a winding marble staircase creating an undeniable atmosphere of elegance and luxury - complete with exquisite decor. Expect modern Japanese cuisine with a Korean-American twist - drawing inspiration from his Korean heritage and travels around the globe. Stand out dishes include duck prosciutto and filet tobanyaki to lamb chops and gambero prawns and Back's famous tuna pizza and wagyu tacos. Also rumoured to be planning an opening of Dosa, an innovative Michelin-starred Korean fine-dining restaurant from Seoul.
There's an intimate 14-seater counter-style Chef’s Table. Dosa, which means ‘gifted’ in Korean showcases a set menu inspired by the four seasons, along with a wine pairing and a focus on the chefs’ showmanship.
AB Tuna Pizza - wafer-thin crunchy crust, umami aioli made with ponzu sauce, tuna sashimi, micro shiso and white truffle oil, the ‘Jeju Domi’, sea bream with tobiko and chojang and the’48 Hour Short Ribs’, Australian wagyu cooked for 48 hours in a traditional galbi jjim marinade.
Bouquet of Guangzhou - blending discarded grape skin, vodka, St. Germain, lacto fermented peaches, chrysanthemum & burdock bitter, agave and Moet & Chandon Brut Imperial NV and the Javapolitan, a mix of Fair organic quinoa Vodka, Cointreau, clarified cranberry, lime, Indian spices and butterfly pea tea.
