The new (more casual sibling) restaurant, called 108, will open next year in the Danish capital and is a joint project with Noma chef Kristian Bauman. The name of the new eatery refers to its permanent address on Strandgade in Christianshavn - and is expected to open in late spring.
Throughout January, the Noma team will be operating a sell-out pop-up in Australia - which sold out in 90 seconds. During this period (January 20 - April 16), the 108 team will take over Noma, giving "diners an early taste of what we have planned". The pop-up will open Wednesday through Saturday for dinner only - serving an a la carte menu and a tasting menu. Noma's lounge will also play host to a wine bar during this time. Reservations are currently available via an online system, though the website notes there will also be tables for walk-ins.
Earlier this year, Mr Redzepi announced that he will shut Noma at the end of 2016, and will relocate to a currently derelict site just outside the the city’s trendy Christiania district, which he hopes to open in 2017 and will include an urban farm, which will provide much of the restaurant's produce. Noma, which opened in 2003, has topped the World's 50 Best Restaurants Awards multiple times, though earlier this year it was knocked from the top spot by Spanish restaurant El Celler de Can Roca. The waterfront restaurant, boasts two Michelin stars, is credited with putting Scandinavia on the world food map, and pioneered 'New Nordic' cuisine, which focuses on local and seasonal produce.
