Experience modern Chilean cuisine at this month long residency at permanent popup restaurant, Platform1 (in East Dulwich) where chef Marcelo Henriquez is presenting his new menu inspired by the Land of Fire - inspired by primal pleasures of cooking over fire; using smoke to flavour, embers to bake and flames to char.
A menu of traditional dishes such as Chapalele Relleno, Milloquín, Chirimoya Alegre and Tres Leches are carefully developed and combined with contemporary styling to create richly colourful, bold plates... showcasing the diversity of the country's prodcue and cuisine - as well as wholly new dishes created with Chile's most abundant ingredients.
Dining is set against a backdrop of tribal-inspired artwork, inspired by the indigenous and nomadic Ona people, a soundscape of traditional Mapuche music. Open Tuesday to Saturday. The 5-course tasting menu is priced at £35, however à la carte options are available on the night.
