Experimental Beach is one of those hybrid restaurant-beach-bar-lounge spots that’s impossible to define without spending the day there. It’s from the Parisian Experimental Group, the leftfield events group who are behind some of the globe’s hippest hangouts – think New York’s 'Compagnie des Vins Surnaturels' and Paris’s 'Le Ballroom du Boeuf'. Pitch up early and spend the day lolling in your fancy swimsuit on one of the oh-so-chic turquoise daybeds. There’s enough on the cocktail menu to keep even the most enthusiastic drinker occupied and you can always freshen up with a dip in the clear, if tricky to navigate, waters. Experimental’s location, on a well-hidden headland near Salinas, makes for spectacular sunsets (and an in-the-know crowd), so either stay late to catch the rays or turn up early for dinner. When the sun sinks, Experimental does a remarkable volte-face, seguing seamlessly from sun-soaked beach club to exotic, DJ-fuelled night spot where you can get up to more than a little mischief. Dinner, like everything these guys do, is fabulous.

Cocktails are these guys’ raison d’etre. Go for the delightfully OTT Mermaid’s Spritz, with Aperol, Saint Germain, amontillado sherry, lavender bitters, grapefruit juice, lemon juice and rose lemonade. Santé!
