The talented chef line-up for the three week residency at the restaurant at Tate Modern features:
Shaun Presland, 14th to 16th July.
Former Executive Chef at the prestigious Saké trio of restaurants in Australia, Shaun is known for his knowledge of Japanese cooking. Combining his classical training with a contemporary style of his own, and a passion for inventive culinary experiences, Shaun has created an unforgettable menu with dishes such as wasabi lime miso with orange ponzu & potato crisp and liquid centre flavour bomb with coriander vinaigrette.

Gastronomic duo chef Sebastian Mazzola and sake sommelière Sussie Villarico bring their craft to Tate Modern. Mazzola and Villarico are on mission to cook and explore the world, one country at a time. They share a passion for Nikkei (Peruvian Japanese fusion cooking). Their approach reflects their travels through the kitchens of Nimb, NOMA, Geranium, El Bulli, 41°, Tickets and – most recently – Pakta, cooking alongside the likes of Thomas Herman, René Redzepi, Rasmus Kofoed and Albert Adrià. The pair first met each other back in 2011 in Barcelona at Albert Adria’s 41° before founding Cooking in Motion in 2014.
Santiago Lastra, 28th to 30th July.
Voted one of the 10 Best Young Chefs in Scandinavia, Mexican chef Santiago Lastra began his career at Spanish restaurant Mugaritz, before joining the team at Bror in Copenhagen. Other stopovers include the Nordic Food Lab, the Wood*ing Foraging Academy and, most recently, NOMA Mexico – where he worked with Danish chef René Redzepi. Santiago's dishes are inspired by fresh local ingredients but rooted in his own Mexican heritage, with texture, colour and soul at the heart of his cooking. Dishes include: broth of roasted chapulines with mezcal and ancho chilli and salmon and roasted Kohlrabi served as a tataki with chilli-damson jam and lemon purée.
Tickets to the dinners cost £39.50 or £50, which includes a ticket to Giacometti or Soul of a Nation exhibitions.
