Aquiles Chavez, one of Mexico’s most innovative and celebrated chefs, is bringing his exciting cuisine to London for a special three-day visit in June. Aquiles, who has a string of hit TV shows to his name in Mexico, is cooking at Santo Remedio from 13th to 15th June as part of a unique collaboration with Edson Diaz Fuentes.
A judge on Top Chef Mexico, Aquiles has opened restaurants in Houston, Texas, Playa de Carmen, Tabasco and most recently Sotero Restaurant in Pachuca, Hidalgo Mexico. Aquiles trained at Mexico’s Colegio Superior de Gastronomia and at Le Centre de Formation d’Alain Ducasse in Paris.
Mesa Santa (on 13th June) is an itinerant Mexican Feast table for just a few diners, offering a tasting menu with unique drinks pairings, unusual ingredients and traditional dishes. On the 14th and 15th sees Aquiles take over the specials blackboard with some of his signature dishes for both lunch and dinner.
