Filipino Pop-Up at the InterContinental Century City

The InterContinental Century City is hosting a month-long Filipino pop-up at its Mari restaurant.

Each Thursday evening, from August 9 to 30, chef Brian Bellicourt will host a Filipino-inspired dinner in Mari’s outdoor garden.

Bellicourt’s pop-up will take over the restaurant's entire outdoor courtyard, offering a menu inspired by his mother’s cooking. He will be serving traditional Filipino dishes with a modern twist. The menu will comprise three courses, with dishes including things like a pork belly sisig toast with pâté, or chicken adobo with sautéed ong choy, ube mashed potatoes, pickled unripe papaya, carrots, and peppers, in a vinegar soy-garlic glaze. Instead of the traditional bibingka made with sweet rice four and cream of coconut, Bellicourt’s version uses cornbread with a blueberry lemon thyme compote.

Bellicourt was born on a US naval base in the Philippines, and joined InterContinental at Mari after roles at the Jonathan Club and Fairmont Miramar.

The pop-up will run  from August 9 to 30 from 6 p.m. until 9 p.m., with a fixed menu priced $55 per person.
