The restaurant, headed up by renowned chef Gregoire Berger - widely regarded as one of the most creative and innovative chefs in the UAE. Expect unconventional seafood-leaning dishes refined with traditional French technique. Highlights include: ‘Feeling the warmth of the west side’, featuring a delicate welk shell on a bed of sand, filled with umami dashi with sourdough and seaweed butter; and ‘Sitting on the dock of the bay’ with Brittany brown crab, fragrant kari gosse and bouillabaisse essence.
