The acclaimed two Michelin-starred chef, Alex Dilling, is opening a flagship restaurant at the Hotel Café Royal.

Alex Dilling has earned himself a stellar reputation as the former Executive Chef of The Greenhouse in Mayfair, London - known for honing his expertise with some of the most esteemed and dignified talents in the industry and for his dishes which are meticulousness, precise and luxurious. Expect Dilling’s menu to showcase his love and respect for French bistro cooking and a culinary style refined by a career in New York and London working, alongside the likes of Alain Ducasse, Didier Elena and Hélène Darroze.

Sourdough English muffin served with seaweed butter, smoked sturgeon rillettes & caviar; lobster croquette with Black Winter truffle, shiitake mushrooms & ginger; Bluefin tuna with cucumber & Hass avocado; buttermilk fried monkfish with sauce Gribiche, A5 Wagyu “Wellington” and Landes chicken “Hunter Style”.
