Another sensational restaurant from Chef Jose Luis (Arca, Noma Mexico) which is the only bio/natural wine bar in the Peninsula and in the whole country in fact - with over 100 labels from vineyards around the world, many of them Mexican. The menu takes inspiration from classic brasserie dishes, adapted to the tropical jungle climate using local, seasonal ingredients and local Mayan cooking techniques and flavors. Highlights include the wood coconut flat bread prepared in the wood-fried oven, the homemade charcuterie and the epic pork belly Sando. Expect a casual fine-dining experience in a refined “inside-out” jungle setting.

Pork belly tempura sando with togarashi mayo & cucumber kimchi; tomato salad with Recado negro balsamic, onion flowers, chives & caramelized cotija cheese; steamed clams with lemongrass, ginger, coconut, basil and serrano chilli and grilled sea trout with roasted pimiento and coconut sauce & plantain purée.
