Peruvian cuisine is a huge trend around the world at the moment. This seems especially so in Dubai. The latest restaurant to open under this theme is Coya, an award-winning chain from London which fuses Incan heritage with Latin American flair.

From its location at Four Seasons Dubai at Jumeriah Beach, Coya serves fine Latin American cuisine in an open-plan dining room. As guests feast on endless supplies of seafood and meats they gain a glimpse into the workings of the open charcoal grill, the ceviche bar and the central kitchen. 

Looking at the menu it's Incan influences are clear, however, each dish has been adapted to incorporate the most luxurious ingredients.
