The first pop-up concept taking residency at La Cave - a wine bar, pop-up space and incubator kitchen located below Rondo at The Hoxton - is ‘Cantina Valentina,’ which serves up a menu from chef Adam Rawson (Pachamama and The Standard).
The dishes have been inspired by Peruvian flavours, dishes and ingredients served across the country, from the coastal city of Lima to the historic villages around Cusco. Highlights include scallop ceviche with maiz morado, pink peppercorn and coconut and Jerusalem artichoke and corn tamale.
Open Tuesday to Saturday, 5pm-12.30am.
Crab bisque with fried soft shell and oca roots; whole grilled sea bream Nikkei style; duck confit and special fried rice; and Pollo a la Brasa with salsa criolla, aji Amarillo mustard and achiote mayo and coal-roasted root vegetables cooked in banana leaf.
