The Hotel Metropôle Monte-Carlo’s restaurant has entered a new restaurant chapter with the introduction of Les Ambassadeurs by Christophe Cussac. The long-standing chef now has his name above the door of the stately dining room and terrace. Executive Chef Cussac has been at the helm of the dining room since 2004 - having worked for several years with Joël Robuchon.
The revamped space has been designed by Jacques Garcia - disover a timeless elegant design with light cream and soft woods complementing the rich velvets and mahogany of the lobby bar and foyer. A fitting haute cuisine setting for a menu which showcases classical Mediterranean-inspired dishes combined with contemporary flavours.
Mediterranean Blue Crab with green wheat and herb salad; sea-bream tartare with caviar cannelloni; lobster lasagna with tarragon, spinach and spianata; John Dory with artichoke & a coriander broth and milk fed lamb cutlets with thyme and chickpeas.
