Situated under the rail arches with entrances on both Borough High Street and Dragon Court Alley, Lobos is a 50-cover, split-level Meat & Tapas Bar with interiors by Design MAD (also behind Wright Brothers). Think cavernous space with dark wood and metallic finishes evocative of a wolves’ cave.
Meaning ‘wolves’ in Spanish, Lobos will be a real carnivore’s paradise, focusing on the prime cuts of Iberico pig cooked simply. Additionally, a short list of tapas features the Lobos Bun (with ‘chichas’ – chorizo patty, candied bacon, fried onion, peppers and fried egg on top), Arroz con costra (Rice-with-a-crust – Lobos’ version of the famous Alicante dish) and Martini Olives (martini and herbs stuffed green olives). All ingredients are sourced locally, and the Lobos Meat & Tapas team work closely with Borough Market traders to define the reguarly changing menu.
