The group is owner and operated by Canadian-Lebanese brothers who have invested in proper talent in the kitchen with Executive head chef Louis Kenji Huang - former Head sushi Chef at Nobu Las Vegas. Expect a (contemporary fusion) menu that shows global influences both in ingredients and techniques and exciting textures, while remaining Japanese at heart.
Oliver Maki is a fairly intimate venue (on two floors) with space for just 55 covers with a sleek and sophisticated interior. There is also a six-seat bar serving sake, wine, and cocktails.
Launched in Kuwait in 2004 by Canadian-Lebanese brothers Oliver and Amer Zeitoun, the group now has four sites in the Middle East, including four in Kuwait and one in Bahrain. Oliver has also eaten in one of the Oliver Maki branches every single day for the past decade, sometimes visiting twice in one day.
Tokyo with a twist...
The Oliver Maki roll involves eight rolls in one – a voyage of flavours on a single plate. Regulars are encouraged to design their own versions, which appear duly namechecked on the menu if they pass muster with management. Also order the Sushi Jewel Box - a selection of sushi rolls in a specially designed box.
