Michelin-starred chef Shaun Rankin's new restaurant in London at luxury, family-owned hotel Flemings Mayfair - focusing on Rankin’s Jersey heritage and taking inspiration from the St Helier shores. The 80-cover restaurant and 40-cover bar offers a modern British menu, along with a chef’s table and two private dining rooms following a complete £15 million refurbishment at the hotel. 

Interior designers Tully Filmer have created a beautifully intimate dining space  - with dark wood panelling and British racing green leather and velvet banquette seating, complimented with delicate bronze highlights, creating an Art Deco-inspired space awash with 1930’s glamour and artistry.

This new venture from Shaun runs alongside his current restaurant, Ormer in Jersey, which has held a Michelin star for the past decade - and his role as Executive Chef of 12 Hay Hill - the business members' club (also) in Mayfair.

Signature Dishes

Jersey lobster ravioli in a rich crab and tomato bisque with refreshing shallot salad; hand-dived scallops are served simply with bittersweet barbecued leeks, sea herbs and a lemon parsley vinaigrette, tartare of Scottish beef with horseradish panna cotta, nettle and watercress; Dover sole with smoked salmon, potato and leek risotto, served with crisp quail’s eggs; secreto of Iberico pork with charred calamari, chorizo chutney and puréed Asian pear and roasted grouse with juicy blackberries, barbecued celeriac and baked sweet apples and fruits de mer served with Jersey Royals, fennel and mint or côte de boeuf and wild mushrooms with beer-cooked shallots, béarnaise sauce and triple-cooked chips.

Rose is a Rose is a Rose (Plantation 3 Stars rum, hibiscus liqueur, lime juice, grapefruit juice and egg white) or take Half a Step Outside the Circle (Cherry Heering, blood orange syrup and Devaux Cuvée Champagne); They Do It With Mirrors (Herradura Blanco tequila, Crème de Peche, lavender & chamomile syrup, egg white, lemon juice and Zinfandel red wine) or settle in for an Endless Night (Remy Martin 1738 Cognac, lemon juice, fresh basil, brown sugar and tawny 20- year-old port).
