Speaking of magic, Chef Nilton Castillo (formerly of SLS South Beach) gets creative in the kitchen, whipping up modern Japanese cuisine with Peruvian flavors. Guests can enjoy a variety of ceviches, tiraditos, and signature sushi rolls, including the must-try Catalina Roll, made with shrimp tempura and goat cheese.
