Xavier Rousset left his post of co-founder of both Texture and 28º-50º Restaurant Group to embark on this solo project to showcase his skills as a Master sommelier and restaurateur. There's a 250-strong wine selection, (including 40-50 Champagnes) which has been described as 'interactive' with selections handpicked by Rousset, input from respected indusrty personalities, plus some suggestions from customers are included too. On top of this, there are monthly Saturday wine tastings on offer where U can learn from the best.
It's not just wine though, expect both small and large plates of Mediterranean classics, along the lines of meat, seafood and raw vegetable dishes. It's intimate; 45-cover with a 14-cover bar at its centre. The venue is open every day for food, midday-10pm, with the bar staying live until 11pm (10.30pm Sundays).
There are whispers of a second venue to open mid 2016 with fellow sommelier Gearoid Devaney, close to Bank Station.
