With four diverse, unique concepts housed under one roof, The Collective truly innovates. The Levantine Emporium, as the name suggests, specialises in regional cuisine with creative dishes such as Tagine, Quinoa Bil Raihan, Mackerel with Dates, and Kashkaval Shawarma. The Bombay Café showcases a lesser known cuisine from this bustling city, Parsi with specialities like Jardaloo Sali Margi (chicken with apricots) and Patra Ni Machi (banana leaf steamed fish enveloped with green chutney), alongside tandoori classics. The Grill Bar is a steakhouse offering a variety of meats cooked to individual preferences, as well as ribs, burgers, and seafood specialities. And the fourth and final concept, The Bakery, caters to sweet tooth cravings with its home-style offerings including Fruity Cakes, Cassis & Torched meringue, Rustic Apricot Tart, Chocolate Baklava, and other Arabic sweets. A Beverage Bar in the centre of the room offers juices, smoothies and more, tying it all together.
Each micro restaurant has individual menus and their own live cooking stations to make for the freshest experience. Designed by the renowned Super Potato group, each section of the restaurant features elements to reflect the concept - whether it's bright colours and handmade rugs in the Bombay Café; intricate patterns and mosaic tiles in the Levantine Emporium; or the edgy, industrial vibe of the Grill Bar.
The Collective is open all day from breakfast through to dinner. With an indoor tropical garden just adjacent, the space is set to become a hub for regular pop-up events after the summer.
