Sagardi, a beacon of Basque gastronomy, comes to Shoreditch...

Specialising in traditional Basque country food and drink found on farms and in taverns all over the region, the Sagardi menu offers the best produce from Basque farms and its coast, all flown in daily from San Sebastian. Head Chef Iñaki Viñaspre calls his cuisine ‘the cooking of their grandmothers’, as recipes have been passed down through generations. Notable examples include beefsteak, codfish and “piquillo”peppers. The Basque Country style of cooking champions the use of exceptional-quality seasonal ingredients with a special emphasis on fine cuts of beef known as “Txuletón” and whole fish cooked on the grill.

As with the other Sagardi restaurants (throughout Spain and South America), the 141-cover London restaurant is divided into two spaces: the Pintxos bar offering a range of Basque country snacks served with the infamous Basque cider, regional beers and wines. The second space, the grill restaurant, is home to an impressive central charcoal grill as well as a street-facing, stand-alone (street-facing) butcher within the restaurant, where sides of Galician beef hang from the ceiling (beside the customary ‘trainera’, a centuries-old traditional Basque shing boat), and available to take away.
