The Holy Birds

A bar inspired by 60s music that specialises in poultry dishes and cocktails...

The Holy Birds is owned by brothers Gerry and Jon Calabrese, who are also behind The Hoxton Pony and Wringer & Mangle as well as Hoxton Gin, while the cocktails have been created by their father - the legendary barman Salvatore Calabrese.

The theme has been inspired by the song White Birds, by San Francisco psychedelic band "It's a Beautiful Day". The venue houses a metre-tall rotisserie with chef Benoit Berenger from Wringer and Mangle overseeing a menu that spans chicken, woodcock, pigeon, grouse, quail, pheasant and duck. The “posh Nando’s” dishes are served alongside retro classics including moules marinière and cheese fondue.

The cocktails created by Salvatore are to complement the food, and come into their own in the downstairs bar. The list includes classics such as the Singapore Sling, Silk Stockings and Golden Cadillac as well as twists on well-known drinks, including a Moscow Mule featuring homemade ginger sorbet.

Taking inspiration from London’s music and art scene in the 1960s The Holy Birds is split across two floors and features a restaurant, bar, lounge and private dining room. The interiors are inspired by the 60s Danish modernist movement and has been designed by DTWO Design, with Dimension Interiors. The venue resemble “a glamorous granny’s house back in 60s, when she was young and gorgeous".
